We said we were going Italian, so why not start with a classic. Bacon Carbonara was even simpler to make than fettuccine Alfredo, and I think that it tastes better too!!! Searching the Internet I found many different recipes, so I decided to combine a few things from several recipes. Brianna started by frying the bacon although she did get a few splatters from it she did a great job. While that was cooking we put on a large pot of water to boil adding salt and olive oil to it. When the bacon was done we let it cool we chopped it up along with five mushrooms and some onions (I bought them pre chopped because I despise chopping onions), and some parsley. In some of the reserved bacon grease we sauteed the onions and mushrooms til the onions were translucent. While I chopped and sauteed Brianna mixed together four egg yolks, 1/2 cup heavy cream and 1/2 a cup parmesan and romano cheese. Once the pasta was cooked to al dente we drained it leaving a few tablespoons of water still in the pot. One the pasta is back in the pan we added the egg and cream mixture making sure to quickly stir it so we did not have scrambled eggs. Once the pasta was coated we added the mushrooms and onions along with a small can of sliced olive (drained). Once we plated the pasta I sprinkled some chopped parsley on the top. Viola, super quick and super yummy.
On a side note we decided to make it a movie note and ate our bacon carbonara while watching Big Miracle. A wonderful movie that of course made me cry like a baby. I highly recommend that everyone watch it!!! Not sure whats next so stay tuned.
